Why 'Two Tablespoons Per Cup' Is Unreliable
The common rule of two tablespoons per cup is based on volume measurement, which varies enormously with grind size and roast level. Two tablespoons of coarsely ground light roast might weigh only 8g, while the same volume of finely ground dark roast might weigh 12g — a 50% difference that produces dramatically different cups. Espresso: Completely Different Numbers
